Production Area and Grapes
The pleasant surroundings in which the "Bardolino Chiaretto DOC" is produced lie in the Veronese Garda area, covered in vineyards and olive groves stretching over the rolling green hills. The vine varieties that go into the Bardolino Chiaretto DOC are: Corvina veronese 35-65%; Rondinella 10-40%; Molinara, Rossignola, Barbera, Sangiovese, Marzemino, Merlot, Cabernet Sauvignon singly or together for a maximum of 20%, but with no more than 10% for each variety.
How it is produced
Tradition teaches everything about the production of Bardolino Chiaretto DOC. The must requires careful watching so it can be separated from the skins when the ideal perfume and color have been reached. In our region, making rosé wine from red grapes springs from local tradition and a profound knowledge of the characteristics of our grapes. A careful fermentation at controlled temperatures follows, in order to maintain the characteristic aromas of the grapes. The sparkling "Bardolino Chiaretto DOC" wine obtained by natural fermentation can be labeled "Spumante Brut", the first in Italy. Its color is brilliant while delicate, seductive with hues of pink, from rose petals to coral pink, salmon pink and, after a year of aging, to tones of old-rose. Its aroma is decidedly floral, with hints of rose, wisteria and other spring flowers. The taste is very pleasant, fresh, spirited and refreshing. The fresh fragrance and perfume make the Bardolino Chiaretto DOC an excellent choice to accompany fish, cured meats, risotto dishes and white meats. It should be served cold, at a temperature of 10/12°.
